Vanilla Custard ICE CREAM

INgredients:

  • 3 eggs

  • 3/4 cup granulated sugar

  • 3 cups heavy whipping cream

  • 1 cup milk

  • 1 tsp vanilla extract (optional)

How to make:

  • Prep: Freeze the bowl and paddle attachment to your ice cream maker for 24 hours.

  • To prepare ice cream custard: Beat eggs and sugar for 5 minutes, until thick and pale.

  • Mix in the cream, milk, and vanilla until blended. Place batter in the fridge for at least 4 hours or freeze for 1-4 hours or until very cold.

  • To make ice cream: Pour cold batter into the frozen ice cream maker and churn for 25-30 minutes.

  • Ice cream will look gritty once done.

  • Transfer ice cream into a container and freeze until firm or enjoy as a soft-serve.

    Notes
    Servings: this recipe makes approx. 10 (1/2 cup) servings and almost 2 quarts of ice cream once churned. Adult servings and Children's servings vary so calories may differ. 
    To Scoop Ice cream: freeze the churned ice cream overnight. 
    Soft-serve ice cream: enjoy right after churning for a soft serve vanilla ice cream.

GHee roasted potatoEs

INgredients:

  • 3 lbs. red potatoes

  • 1/4 cup ghee*, melted

  • 1 1/2 tsp. Mayan Sea Salt (optional)

  • 2 Tbsp. chopped fresh herb of choice (optional)

  • 1 1/2 tsp. Ground Yellow Mustard Seeds

  • 1 1/2 tsp. Ground Fenugreek Seeds

  • 1 tsp. Ground Cumin Seeds

  • 1 tsp. Ground Fennel Seeds

How to make:

  • Preheat oven: 400 degrees

  • Cut potatoes into wedges and place into a bowl

  • Toss with Ghee, spices, and salt until evenly coated

  • Place onto tinfoil (or parchment paper) and lay the potatoes skin down and roast for 15 mins

  • Turn potatoes to opposite side and roast for 10 additional mins

  • Turn potatoes again to opposite side and roast for a final 10 mins.

  • Remove from the oven and cool for 5-10 mins

  • Toss with fresh herbs if desired and additional salt to taste.

Notes: For additional taste, try dipping in our favorite ranch dressing!

kefir ranch dressing

INgredients:

  • 1/2 cup mayonnaise (choose your brand)

  • 1/2 cup sour cream (choose your brand).

  • 1/2 cup RAW FARM Whole Plain Raw Kefir (or homemade)

  • 1 tsp fresh dill

  • 1/2 tsp fresh parsley

  • 1/2 tsp chives

  • 1/4 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/4 tsp salt

  • 1/8 tsp finely ground black pepper

  • 1/2 of squeezed lemon

How to make:

Combine all ingredients in a large bowl and whisk until thoroughly combined. Store in the fridge for up to a week. Serve on salads, wraps, sandwiches, or with fresh vegetables.
